(Torting is the process of cutting a cake into multiple layers so that it can be stacked with fillings to create height and flavor) the notches on either side are adjustment measurements for accuracy. I haven’t used one in quite sometime but it’s an excellent tool for novice bakers and those who require the assistance. I’m downsizing my cake decorating & chocolate treat making supplies.
