The Nagata Co-op maintains rich soil, replenished with vegetal compost; never with animal waste, chemical fertilizers, herbicides, fungicides, or pesticides. Forty-five years ago, they completely rejected chemical agriculture. Tea bushes were brought to Japan from China and were first grown in the Uji area. Used for over 4,000 years as a medicinal herb in China, Japan developed meticulous methods for producing the highest quality green teas. Organic Sencha Green Tea is only the prized tender leaves of spring. Handpicked, they are immediately steamed and rubbed to prevent oxidation from occurring. Soothing and uplifting sencha has the flavor of fresh tea leaves. Steaming and rubbing the leaves preserves beneficial antioxidants and the emerald green chlorophyll.
